
Tea Brewing Guide
1. Warming the Teapot and Cups
Pour hot water into the teapot, fairness pitcher (Cha Hai), and tasting cups to thoroughly preheat and sanitize them. This helps enhance the tea's aroma and flavor.
2. Adding Tea Leaves
Place tea leaves into the teapot. A good guideline is to evenly cover the bottom of the pot, though you can adjust the amount based on personal preference.
3. Rinsing the Tea
Fill the pot about halfway with hot water, quickly rinse the tea leaves, and discard the water immediately. This step awakens the tea leaves, helps them expand, and ensures a cleaner aroma in subsequent brews.
4. Main Brewing
After pouring hot water into the teapot again, click the tea brewing timer to start timing:

1st Infusion: Approx. 20 seconds

2nd Infusion: Approx. 30 seconds

3rd Infusion: Approx. 40 seconds

Increase the steeping time by about 10 seconds for each subsequent infusion.
Depending on tea quality and personal taste, you can generally brew about 5–6 times.
5. Serving the Tea
Pour the brewed tea evenly into the fairness pitcher (Cha Hai), then divide it into individual tasting cups so that every cup has a consistent concentration.
6. Appreciating the Aroma and Flavor
For the first infusion, it is recommended to pour the tea into an aroma cup first, cover it with a tasting cup, and flip them together. Lift the aroma cup to enjoy the rich, layered fragrance before sipping the tea to experience the full tasting pleasure.
7. Replacing the Tea Leaves
After about 5–6 infusions, as the flavor and aroma begin to fade, it is recommended to replace with fresh tea leaves to maintain the best tasting experience.
